Chilled Cucumber and Sesame Noodles with Tofu
I had a chance to prepare this recipe during The Sweet Spot Virtual workshop hosted by the Canadian Sugar Institute where I learned so much about the new changes take will take effect to our Canadian Nutrition Facts Table. I share more about that, here.

Chilled Cucumber and Sesame Noodles with Tofu
SERVES: 4
PREP TIME: 15 min
TOTAL TIME: 20 min
INGREDIENTS
9 oz (250g) spaghettini or soba noodles
1 lb (450g) firm tofu, cut into sticks or cubes
1 large seedless cucumber, sliced into thin half-moons
1 cup frozen shelled edamame, thawed
2 green onions, thinly sliced, for garnish
Sesame dressing:
5 tsp soy sauce
1 tbsp white wine vinegar
1 tbsp tahini (sesame paste)
2 tsp pure maple syrup
2 tsp sesame oil
¼ cup cold water
Directions:
Boil spaghettini in a large pot of salted water until just tender, about 9 minutes or according to package directions. Drain and rinse with cold water until completely cool. This not only does this cool the noodles but it helps prevent them from sticking to each other.
Meanwhile, to make the Sesame Dressing, whisk the soy sauce, white wine vinegar, tahini, maple syrup, sesame oil and water in a large bowl. Add the tofu, cucumber, edamame and cooled noodles and toss gently but well.
Divide among 4 bowls. Garnish with green onions.
Make ahead: the dressing keeps well in the fridge for up to 4 days. The salad keeps well for up to 4 hours in the fridge. Stir well before serving.
Switch it up: skip the tofu and serve this alongside barbecued chicken or steak.
